Broccoli is a nutritious vegetable that is a healthy source of fiber and vitamin C, as well as supplying a potent dose of protective antioxidants. Using shredded broccoli to create a side dish of coleslaw is one way to boost the nutrition of the traditional version. You can purchase already-shredded broccoli at your local supermarket, making it more convenient to prepare. Mayonnaise and brown sugar enhance the taste of the shredded broccoli and can be used in addition to herbs and spices to create a colorful and nutritious side dish to complement your next barbecue or outdoor gathering.
Step 1
Whisk together mayonnaise, brown sugar, vinegar, salt and pepper in a small bowl. Set aside.
Step 2
Dump the bags of broccoli coleslaw into a large bowl. Add the carrots and onions and toss together. Sprinkle the sliced almonds on top.
Step 3
Slowly pour the dressing over the broccoli, carrots, onion and almonds.
Step 4
Toss the coleslaw using a large spoon to combine the ingredients.
Step 5
Cover the broccoli coleslaw tightly with a lid or with plastic wrap. Chill for at least 1 hour or overnight.
Step 6
Remove the broccoli coleslaw from the refrigerator 10 minutes before serving.
Tips and Warnings
- Replace the mayonnaise with light mayonnaise to reduce the total fat and calorie total of your broccoli coleslaw. A drizzle of honey mixed into the mayonnaise mixture adds a bit of additional sweetness to your coleslaw. You can add additional seasonings with the salt and pepper. Red chili pepper flakes put some heat to your side dish. Dill, basil and parsley also infuse your broccoli coleslaw with some additional flavor. Different nuts can be used to make broccoli coleslaw. Walnuts, pistachios or pecans all pair nicely with the crunch of broccoli and carrots. Sunflower seeds may also enhance the taste and crunch of your side dish. Green onions, sliced celery or fresh corn kernels can also enhance the crunch and flavor of broccoli coleslaw.
- Check the expiration date on the bags of broccoli coleslaw you purchase. Expired vegetables are not as tasty and may even be mushy or slimy.
