If you are in need of a comforting and uncomplicated dinner, give chicken and dumplings soup a try. This simple dish uses ordinary kitchen staples, like fresh vegetables, chicken and herbs, to create a fragrant broth. Easy-to-make dumplings are then cooked directly in the soup, yielding a flavor-rich meal you can have on the table in just 30 minutes. Chicken and dumpling soup is a meal in itself, but also pairs well with a green salad.

Step 1

Heat olive oil in a large pot over medium-high heat. When the oil shimmers, add the carrots, celery, onion, garlic and bay leaf, and cook for 4 to 5 minutes, stirring frequently.

Step 2

Add the salt, pepper, thyme, parsley and poultry seasoning to the vegetable mixture, then sprinkle in the 2 tbsp. flour. Stir to coat, and cook for 2 minutes.

Step 3

Pour the chicken broth into the pot, then add the diced chicken and bring the soup to a boil for 1 minute before reducing the heat to a simmer and covering the pot.

Step 4

Combine the flour, baking powder, cornmeal, sugar and kosher salt in a large bowl and whisk with a fork. Add in the heavy cream and stir until a uniform dough forms.

Step 5

Drop heaping tablespoonfuls of dough into the soup pot, then cover and simmer for 12 minutes.

Step 6

Add the frozen peas to the pot and let simmer for 2 minutes before ladling the soup into individual servings bowls.

Tips and Warnings

  • If your dumpling dough is too firm and dry, pour in more heavy cream, starting with 1 tsp. and adding more if necessary. If the dough seems too wet, add a little bit more flour, 1 tsp. at a time. Rather than using uncooked chicken breasts, you can also use pre-cooked leftover chicken or buy a cooked rotisserie chicken from the supermarket and shred it before adding it to the soup.
