This simple dish uses ordinary kitchen staples, like fresh vegetables, chicken and herbs, to create a fragrant broth. Easy-to-make dumplings are then cooked directly in the soup, yielding a flavor-rich meal you can have on the table in just 30 minutes. Chicken and dumpling soup is a meal in itself, but also pairs well with a green salad.
Step 1
Heat olive oil in a large pot over medium-high heat. When the oil shimmers, add the carrots, celery, onion, garlic and bay leaf, and cook for 4 to 5 minutes, stirring frequently.

Rather than using uncooked chicken breasts, you can also use pre-cooked leftover chicken or buy a cooked rotisserie chicken from the supermarket and shred it before adding it to the soup.
