Chicken breast is an ingredient that makes an effective base for many different accompanying flavors and textures. You can travel around the world in your kitchen with chicken breast by adding spices, sauces and stuffings from various cuisines. Cheese goes well as part of a stuffing for chicken breast, and using feta cheese gives your dish a Greek flair.

Step 1

Preheat your oven to 375 degrees Fahrenheit.

Step 2

Create a stuffing by mixing ½ cup of feta cheese with other ingredients such as black olives, chopped broccoli, green onion and breadcrumbs.

Step 3

Place a chicken breast on a cutting board and make a pocket by slicing into the side of the breast. Cut down about 2/3 of the way through but try not to break through the other side. Repeat with additional chicken breasts.

Step 4

Spoon equal amounts of your feta cheese stuffing into each pocket. Slide a couple of small toothpicks through the flesh on the outside of the pockets so the stuffing stays inside.

Step 5

Heat olive oil in a skillet on medium high heat and place the chicken breasts in the pan. Sear each breast for two minutes per side, until they are golden brown.

Step 6

Place the breasts in a baking dish and bake for 20 minutes, or until they are cooked all the way through. Insert a meat thermometer in part of the breast with no stuffing and look for a temperature of 165 F.
