Portobello mushrooms have large, meaty mushroom caps that often serve as substitutes in vegetarian dishes for large portions of meat such as steaks or hamburgers. They only weigh in at 30 calories, whereas most similar sized portions of meat contain not only hundreds of calories more, but also additional fat and cholesterol. These caps make excellent replacements for hamburger patties, and you can grill them just as easily.
Step 1
Clean and dry all mushrooms and vegetable ingredients.
Step 2
Mix the water, vinegar, sugar, garlic, pepper and olive oil in a small bowl to form the marinade. Pour the marinade onto the mushroom caps and let them set in the fridge for an hour to absorb the flavors.
Step 3
Coat your grill with cooking spray and ignite the grill. You will want to cook the mushrooms 4 to 6 inches above the flame or heat source, on a cooking rack or otherwise. Grill the mushrooms on medium heat, cooking about five minutes per side. Continue pouring excess marinade onto the mushrooms to keep them moist.
Step 4
Transfer the mushroom caps to buns when they're done and add an onion, tomato and lettuce slice to each.
Tips and Warnings
- Substitute different or additional spices into the marinade for other flavors. Use barbecue sauces and cheese to further add traditional burger taste.
- While the recipe as described is very light on calories and fat, adding additional sauces and cheese will increase both counts.
