Definition
Pure olive oil is essentially commercial grade oil. The fact that it is "pure" means that no other non-olive oils are mixed in. However, it usually consists of a mix of different grades of olive oil. Usually a combination of refined oil is mixed with a small amount of extra virgin olive oil. Pure olive oil is an all-purpose oil that is the result of the second cold pressing of olives or it is the chemical extraction of what is left over after the olives are pressed.
Taste
Pure olive oil is simply referred to as olive oil by most manufacturers and has a blander taste and lighter color than virgin olive oil. This is the result of filtering and refining the oil. Because it lacks the taste and body of a virgin or extra virgin olive oil, pure olive oil is often used for frying foods.
Other varieties
Olive oil that is handled the least is considered the purest. The highest quality olive oil is an extra virgin. This is extracted without the use of chemicals or heat and is the result of the first pressing. To qualify as extra virgin, it must also be very low in acidity. A virgin olive oil is the result of the second pressing of the olives and contains more acidity. There are also light olive oils, which are typically a mix of lower grade oils. Regardless of the type of oil you purchase, it should be stored in a cool, dark place. Because oxygen exposure will turn it rancid quicker, keep oils stored in an air tight bottle.
Health benefits
Olive oil has long been touted for its numerous health benefits. In scientific studies, olive oil has been shown to reduce the risk of colon cancer. Its healthy monounsaturated fats decrease the risk of heart disease. It's high in vitamin E and other antioxidants and is an anti-inflammatory. Olive oils with less acidity tend to have more antioxidants because they undergo less processing. Therefore, extra virgin olive oil also has the most health benefits.
