Mangoes are an exotic fruit that is used in many recipes because of its flavor and versatile texture. It can be used in cool or room temperature dishes or heated in cooked dishes. Mangoes have a distinct flavor, so you should be aware that they are dominant in most dishes.
Mango Salsa
Step 1
Peel a mango and remove the pit. Cut the mango into 1-inch. cubes. Chop approximately 1/4 of a red onion to yield 2 tbsp. of red onion. Finely chop cilantro until you have 2 tbsp. of cilantro. Slice a jalapeno in half and remove the seeds; finely chop the jalapeno. Slice a lime in half.
Step 2
Combine the mango, red onion, cilantro and jalapeno. Stir thoroughly to mix the ingredients. Squeeze the juice from half a lime onto the salsa. Stir gently to mix.
Step 3
Store in the refrigerator for at least 30 minutes prior to serving. This allows the ingredients to combine and develop a more complex flavor.
Mango Chicken
Step 1
Sprinkle salt and pepper on each side of 4 clean chicken breasts or 4 to 6 leg quarters.
Step 2
Add 1 to 2 tbsp. of olive oil to a skillet on medium heat. Add the chicken breasts and cook 4 to 5 minutes on each side, or until they are lightly browned and cooked throughout.
Step 3
Chop 1/4 of red onion into small pieces. Add the red onion to the skillet with the chicken and cook for 3 minutes.
Step 4
Pour 1 cup of orange juice into the skillet. Stir lightly to blend the orange juice with the onions. Reduce to low heat and let it simmer until the onions soften.
Step 5
Peel, remove the pit and cut the mango into 1-in. cubes or 2-in. slices, while the onions are cooking. Add the mango to the skillet and cook for 2 minutes. Remove from heat and serve on top of rice.
