Gluten is a protein found in grains like wheat, oats and rye. Gluten intolerance, also known as celiac disease, is an autoimmune disorder in which the immune system thinks gluten is trying to infect the body. When a person with gluten intolerance eats gluten, the immune system attacks the gluten. Unfortunately, while doing so, the immune system also damages the lining of the small intestine, causing a variety of symptoms, including swelling and muscle spasms. If you suspect you have gluten intolerance, consult your doctor.

Swelling

When the immune system attacks gluten and damages the intestines, a variety of gastrointestinal symptoms result. As part of the immune response, the lining of the intestines frequently become swollen and inflamed. Additionally, general abdominal bloating and swelling may occur, which may result in pain and tenderness around the abdomen, explains the National Digestive Diseases Information Clearinghouse.

Muscle Spasms

The resulting damage to the small intestine reduces its ability to absorb vital nutrients and minerals from food. As a result, people with gluten intolerance often become malnourished, reports MedlinePlus. A lack of minerals and nutrients can cause a variety of symptoms, including muscle cramps and spasms. Joint and muscle pain may also develop. In severe cases, seizures may result from gluten intolerance.

Other Gastrointestinal Symptoms

There is no typical set of symptoms associated with gluten intolerance; all or none of the possible symptoms may result, according to MayoClinic.com. Other possible gastrointestinal symptoms include nausea, vomiting, diarrhea or constipation. In certain cases, stools may be bloody, oily or foul-smelling. Decreased appetite or unexplained weight loss are also possible.

Additional Symptoms

Many other symptoms are possible from gluten intolerance and many may appear unrelated to the digestive system. Possible symptoms include fatigue, depression, anxiety, canker sores and arthritis. Gluten intolerance may cause some women to miss menstrual periods or experience recurrent miscarriages and infertility. Osteoporosis and bone fractures may also occur. Many people with gluten intolerance also develop a skin condition called dermatitis herpetiformis, which causes an itchy rash.
