How to Bake a Fresh Duck

Among the different types of poultry used at dinner time, duck typically comes after chicken and turkey. This is commonly a result of the stronger flavor and overall availability of duck meat at the local grocery store compared to chicken and turkey. But when cooked properly, duck meat has a tender, juicy texture. Baking a fresh duck requires a simple preparation and cooking process to ensure the meat comes out juicy, tender and delicious.

Step 1

Preheat your oven to 350 degrees Fahrenheit.

Step 2

Trim any excess fat from the duck meat and wash thoroughly to remove any blood or feathers.

Step 3

Poke the entire skin of the duck with the knife to allow the fat to render during the baking process.

Step 4

Rub the salt and pepper into the outside of the fresh duck for seasoning and place into a baking dish.

Step 5

Bake the fresh duck for 30 to 35 minutes per pound. For example, a 4-lb. fresh duck requires about two hours to bake.

Step 6

Insert a meat thermometer into the thickest part of the meat and remove the duck from the oven when the internal temperature reaches 165 degrees Fahrenheit.

Step 7

Let the duck cool for 10 minutes before carving.

Tips and Warnings

  • Plan for having 1 lb. of fresh duck per person. You can marinate the duck for up to two days in the refrigerator.
