Even those who don't love the taste of squash can enjoy this casserole. It's made with Ritz crackers, onions and, if you like, several other ingredients that add flavor and creaminess to the dish. With a mild taste, the squash adds more texture than flavor. The other ingredients really kick up the flavor in this dish, making for a gooey, rich meal.

The Squash

Squash casseroles made with onions and Ritz crackers tend to primarily call for using summer squash such as yellow squash and zucchini. Some recipes suggest using butternut squash. To prepare the squash, peel the squash and slice it lengthwise to expose the inside. Scoop out the seeds inside before cutting it. Dice the squash into bite-size pieces. Saute the squash pieces in a pan coated with a little vegetable or olive oil or butter. When the squash is broken down, remove it from the burner and set it aside.

Ritz Crackers, Onions and Other Ingredients

Other ingredients in this type of casserole include seasonings such as salt, pepper and garlic pepper, sour cream, milk, eggs, shredded cheddar cheese and chopped onions. Saute the onions in butter until soft. Add all the ingredients to a baking dish and mix together well before baking. Once you mix all the ingredients together in a baking dish, top the casserole with about 1 cup of crushed Ritz crackers.

Baking

Preheat the oven to 350 degrees Fahrenheit to bake this dish. Once the ingredients are mixed together well, place the dish in the preheated oven. Cook for about 25 to 30 minutes, or until the top appears brown and crusty, and the dish is warmed throughout.

Other Tips

After cooking the squash, remove any excess moisture from it by placing it in a colander lined with a clean towel or cheesecloth. Allow the squash to drain while you prepare the other ingredients for the dish. Instead of mixing the shredded cheese in with the main ingredients, mix it with the Ritz cracker crumbs so the top is cheesy. Add hot sauce to the ingredients to give the dish spice.
