How to Cook Korean-Style Ribs

Korean-style grilled ribs, also known as kalbi, are tender, juicy and flavorful. You can find this delicious dish in Korean restaurants. Do not be intimidated by preparing Korean ribs at home. The ribs are made using a long, thin cut of beef called flanken or short ribs, not to be confused with American short ribs. Marinate the meat overnight in Asian flavors such as garlic, ginger and hot sesame oil. Grill the kalbi over medium-high heat, and have a new family favorite in just a few minutes.

Step 1

Place the sugar, rice wine, apple juice, tamari or soy sauce, garlic, sesame oil, black pepper and ginger into a medium bowl. Whisk the marinade together until thoroughly combined.

Step 2

Put the ribs into a large freezer bag. Pour the marinade into the freezer bag.

Step 3

Seal the bag tightly. Squeeze and turn the bag until the meat is well-coated with the marinade.

Step 4

Place the bag into the refrigerator. Marinate overnight.

Step 5

Prepare an outdoor gas or charcoal grill or grilling. Turn a gas grill to medium-high heat or light charcoals and allow them to get hot.

Step 6

Drain the excess marinade from the meat. Place the meat in a single layer on the hot grill.

Step 7

Grill the ribs for around three minutes per side, turning once, until they are browned and cooked through. Remove the ribs from the grill and arrange on a large serving platter.

Step 8

Garnish the ribs with the toasted sesame seeds and chopped scallions. Serve immediately.

Tips and Warnings

  • Korean-style short ribs, also called flanken, can be purchased at most Asian markets. Serve your ribs with white rice and kimchi.

  • 1/4 cup apple juice
  • 1/2 cup tamari or soy sauce
  • 6 garlic cloves, minced
  • 2 tbsp. hot sesame oil
