How to Cook With Prosciutto & Chicken

Dress up basic chicken breasts with prosciutto for a romantic dinner for two or an elegant dinner party. Prosciutto is a paper-thin cured ham with a deep, salty flavor and a melt-in-your mouth texture. Paired with either a simple salad, seasonal vegetables or your favorite sides, this simple and memorable dish is sure to be a favorite. This simple main course is also low in fat and calories, making it as healthy as it is delicious.

Step 1

Trim away excess fat and remove the tenderloin from each chicken breast. Reserve the tenderloin for future use. Rinse the chicken breasts and pat dry.

Step 2

Lay out one slice of proscuitto for each chicken breasts, allowing one breast per person.

Step 3

Sprinkle the prosciutto with fresh, finely chopped herbs. Try oregano, sage or rosemary.

Step 4

Season each chicken breast with freshly ground black pepper.

Step 5

Place a chicken breast on each slice of prosciutto. Wrap the prosciutto around the chicken and secure into place with a toothpick.

Step 6

Heat 1 tbsp. olive oil over medium heat. Add the prosciutto-wrapped chicken and cook until the prosciutto is crisp and the chicken cooked through, around six to seven minutes per side.

Step 7

Remove the toothpicks before serving.

Tips and Warnings

  • Deglaze the pan with 1/2 cup dry white wine to make a simple and tasty sauce for the chicken. Try adding fontina cheese to this dish for a flavorful twist.
