How to Bake With Sweetened Chocolate

In the baking world, sweetened chocolate refers to dark chocolate and does not contain milk solids. Varieties of sweetened chocolate include bittersweet chocolate, which is referred to as European dark chocolate, and semi-sweet chocolate. Bittersweet and semi-sweet chocolate contain cocoa butter, cocoa liquor, sugar, and vanilla. Bittersweet chocolate has a stronger chocolate flavor and is not as sweet as semi-sweet chocolate. Sweetened chocolate can be found in the form of chips or bars, and can be used in confections, desserts or pastries.

Chocolate Fudge - Conventional Method

Step 1

Line the baking pan with aluminum foil and set aside.

Step 2

Place chocolate chips, salt, and sweetened condensed milk in a medium saucepan and melt over low heat.

Step 3

Add vanilla and nuts to melted chocolate and spread evenly into pan. Refrigerate for two hours until firm.

Chocolate Fudge - Microwave Method

Step 1

Place chocolate chips, salt and sweetened condensed milk into a microwavable bowl.

Step 2

Microwave on high for three minutes or until melted, stirring halfway through cooking time.

Step 3

Add nuts and vanilla and spread into pan. Refrigerate for two hours until firm.

Chocolate Cheesecake

Step 1

Preheat oven to 350 degrees Fahrenheit. Mix together the Oreo cookie crumbs and butter, then press the mixture onto bottom of the spring-form pan.

Step 2

Mix cream cheese, vanilla, and sugar in a bowl, and beat with an electric mixer until well combined. Add the melted chocolate and eggs, and beat on low until well blended.

Step 3

Pour the batter into the Oreo cookie crust and bake for 55 minutes, or until the center is almost set. Cool completely, and then refrigerate for four hours

Tips and Warnings

  • If you use a dark, non-stick spring-form pan, adjust the baking temperature of the cheesecake to 300 degrees Fahrenheit.

  • 1 can (14 ounces) sweetened condensed milk

  • 1/2 cup chopped nuts
  • 1-1/2 tsp. vanilla extract
  • 8 or 9-inch square pan
  • Aluminum foil
  • Saucepan
  • Microwavable-safe bowl
  • 1-1/2 cups crushed Oreo cookies
  • 2 tbsp. melted butter
  • 3 pkg. (24 ounces) cream cheese, softened
  • 3/4 cup sugar
  • 1 tsp. vanilla
  • 1 pkg. (8 squares) semi-sweet chocolate, melted
  • 3 eggs
  • 9-inch spring-form pan
  • Electric mixer
