Rocky road fudge offers all of the sugary richness of traditional fudge, studded with light, sweet marshmallows and savory walnuts or almonds. You can dress up this favorite with better-quality ingredients or more modern twists and additions to an already playful treat. Rocky road fudge is ideal for holiday gift giving, but can be enjoyed any time of the year.
Step 1
Line the baking pan with aluminum foil or kitchen parchment paper. Spray with nonstick cooking spray.
Step 2
Combine 1/3 cup unsalted butter, cut into chunks, 1 cup of evaporated milk, 1 1/2 cups of granulated sugar, and 1/4 tsp. of salt in a heavy-bottomed saucepan.
Step 3
Bring the milk and sugar mixture to a hard boil over medium-high heat. Boil for five to seven minutes.
Step 4
Remove the pan from the heat and stir in 12 oz. of chopped chocolate. Choose milk chocolate for a sweet, mild flavor, semi-sweet for traditional fudge, or dark chocolate for a dressed up twist on rocky road. Add 1 tsp. of vanilla extract. Whisk until the mixture is smooth and silky.
Step 5
Fold in 2 cups of miniature marshmallows and 1/2 cup chopped walnuts with a silicone spatula. Flatten the surface and allow to cool completely before cutting.
