Broiling your boneless pieces of chicken can help you create a quick and healthy meal. Boneless chicken breasts or thighs may be prepared in the broiler with total cooking time typically less than 20 minutes. The pan used for cooking must be resistant to high heat. Choices for the roasting pan include stainless steel or cast iron. Leave the skin on the chicken when broiling to help lock in the moisture.
Step 1
Preheat the broiler on your oven to medium-high. Adjust the oven rack to keep it approximately 6 inches away from the heat source.

Rinse the chicken with cold water. Pat the chicken dry with a paper towel.

Coat the boneless chicken pieces with olive oil. Season both sides of the chicken with lemon juice, salt and pepper.

Arrange chicken on the pan. Place the chicken in the broiler.

Cook the chicken in the broiler for approximately 10 to 20 minutes depending on the size of the pieces.

Insert a meat thermometer into the thickest portion of the chicken. A minimum temperature reading of 180 degrees is required.

Allow the chicken to rest for five minutes. Remove the skin with a kitchen knife and serve.
Tips and Warnings
- If you want to glaze the boneless chicken with a sauce, such as honey-mustard or barbeque, wait until the last five minutes of cooking time to baste the chicken. A quarter cup of dry white wine may be added to the chicken during the last few minutes of broiling for extra flavor. Wash your hands with anti-bacterial soap and wash all surfaces and utensils that come into contact with the raw chicken to avoid food-borne illnesses.
- Do not turn the chicken while broiling. Both sides are cooked simultaneously so turning is not necessary.
