A grilled dessert finishes up a barbecue on a sweet note without heating up the kitchen with the oven. The heat remaining in the grill after cooking the main entrée is enough to lightly char the pineapple and pound cake for this dessert. Both main components to this dessert hold up well on the grill so they won't crumble and fall through the grate. Additional toppings, such as whipped cream or ice cream, add more complexity and sweetness to the grilled dessert.
Step 1
Stir together the melted butter, brown sugar, vanilla extract and cinnamon in a small bowl. Set the mixture aside.
Step 2
Cut off the outer skin of the pineapple. Cut the pineapples into 1/2-inch slices. Cut out the core of each pineapple slice.
Step 3
Cut a thawed pound cake into 1/2-inch slices.
Step 4
Grease the grill grate by pouring vegetable oil onto a paper towel. Wipe the oil onto the grate using the grill spatula.
Step 5
Brush both sides of the cake and pineapple slices with the brown sugar mixture. Place the pineapple and cake slices onto the grill grate.
Step 6
Cook the slices for one to two minutes to get a light char. Flip the cake and pineapple slices. Cook an additional one to two minutes.
Step 7
Remove the cake slices from the grill when they are lightly browned. Remove the pineapple slices when they are browned and caramelized. Place the pineapple slices on top of the cake slices.
Step 8
Top the cake and pineapple with caramel sauce and whipped cream. Serve the dessert immediately.
