How to Keep Dough From Sticking to a Pizza Peel

Using extra cornmeal or flour on your pizza peel may not effectively keep your dough from sticking. The cornmeal or flour can soak into the moist dough, causing them to become ineffective at preventing sticking. Additionally, any residual cornmeal may end up in the bottom of your oven and emit smoke as it heats up in the oven. Instead, use another method that keeps your peel completely stick-free and poses no risk of a smoking oven.

Step 1

Tear off a piece of parchment paper large enough to cover the pizza peel.

Step 2

Center the piece of parchment paper flat on top of the pizza peel.

Step 3

Place your dough on top of the parchment paper.

Step 4

Slide the dough off the peel into the oven with the parchment paper underneath it. You can cook the dough on top of the parchment paper in the oven. If you find that the crust is less crisp when using the parchment paper, slide it out from under the dough toward the end of the baking time to give the dough time to crisp up.

Tips and Warnings

  • The longer the dough sits on the peel, the more likely it is to stick. Test if the dough is sticking to the peel by jerking the peel back and forth to see if the pizza moves around on the peel. To loosen dough that is already stuck on a pizza peel, lift up the edges and place some flour underneath it. Move the pizza peel back and forth to see if the pizza comes off the peel.
