Mustard seed is a spice that is used in a variety of dishes, including curries, stir-fry dishes, meats and vegetable side dishes. It is also a common ingredient in Indian and Asian spice blends. Mustard seeds are typically toasted before use to bring out their spicy flavor. If you are grilling meats or vegetables outdoors, you can save an extra trip to the kitchen by toasting mustard seeds on your charcoal or gas grill.
Step 1
Spray a light coat of olive oil cooking spray on the shiny side of a sheet of aluminum foil. The sheet should be large enough to cover the cooking grate of the grill.
Step 2
Light the grill. Carefully place the oiled aluminum foil on the cooking grate. Cover the grill and allow it to heat for 15 minutes.
Step 3
Spread mustard seeds in a single layer on the aluminum foil. Stir with a spatula for about one minute, or until the seeds begin to brown and pop. Use the spatula to gather the seeds and transfer into a bowl.
Tips and Warnings
- Wait until meat or vegetable dishes are almost cooked before grilling mustard seeds. They impart the strongest flavor when freshly toasted. Mix brown, white and yellow mustard seeds for added flavor and aroma. Each type of mustard seed has a distinct flavor.
- Keep your face at least 2 feet away from the grill, and wear protective eyewear when grilling mustard seeds. As the seeds begin to pop, they can cause the olive oil to splatter, which can cause eye or skin injuries.
