Raw Vegan Meals With 100 Calories

A raw vegan diet consists of plant-based foods that are uncooked or cooked below 118 degrees Fahrenheit. Raw dieters have three main food groups, which include sweet fruits, high fat vegetables and leafy green plants. Because raw veganism is fairly restrictive, supplementation of certain vitamins and minerals like B12 may be necessary. A wide range of low calorie meals are available for raw vegan dieters such as salads, stuffed vegetables and creative vegetable snacks.

Beet and Carrot Salad

A beet and carrot salad is a simple salad that has as little as 30 calories per serving. This salad consists of one fresh beet, one raw carrot, a half a clove of garlic, a half tbsp. of chopped onion and a tbsp. of basil. Not only is it low in calories but is rich in potassium, fiber, vitamin A, folate and manganese.

Kale Chips

With around 100 calories per serving, these chips can serve as a healthy, low calorie complement to any meal. Make chips with two bunches of kale, 1 tsp. of sea salt, a third a cup of olive oil, 2 tsp. of agave nectar, 2 tsp. of cayenne pepper and juice from two oranges. Combine all ingredients in a bowl except for agave nectar and massage until kale has shrunk to about half of its original size then massage in agave nectar. Add garlic, basil, parsley and your favorite spices to your tastes. Dehydrate kale chips at 115 degrees until they are crispy.

Pesto Stuffed Mushrooms

With only 30 calories per serving, pesto-stuffed mushroom are relatively easy to make. Combine a third a cup of pine nuts, three minced garlic cloves, a third cup of packed chopped cilantro leaves, a third cup packed fresh basil leaves, 1 tbsp. of lemon juice, 2 tbsp. of low sodium shoyu soy sauce in a food processor and pulse chop several times. Add 1 cup of chopped tomatoes and blend until it has the consistency of pesto. Remove the stems from 15 portabello mushrooms and fill with pesto. Place the filled mushrooms shells on a dehydrator sheet and dehydrate at 105 degrees for approximately 3 hours.

Dinner Salad

This light and simple dinner salad is just above 100 calories and large enough for a full meal. Toss 4 cups of mixed mesclun lettuces with juice from half of a lime, 1 tsp. of sea salt and one tablespoon of fresh ground black pepper. Serve on a plate and top with 1 cup of sliced red bell pepper, 1 cup of sliced zucchini and one-half cup of sliced cucumber. This is a dinner salad that is rich in fiber and protein.
