Chicken is one of the most popular meats available and it can be seasoned in countless ways. Marinating your chicken before cooking it is one of the best ways to also tenderize it so you end up with juicy meat. Coffee and barbecue sauce are both bold tasting marinade ingredients that will infuse your chicken with many layers of flavor. Marinate the chicken for four to eight hours to give it plenty of time to soak up the flavor of these ingredients. Once marinated, you can roast or grill your chicken for a nutritious and delicious meal.
Step 1
Combine the coffee, barbecue sauce and olive oil in a large marinating dish.
Step 2
Whisk vigorously to combine.
Step 3
Add the onion, garlic, ground mustard, paprika, salt and pepper. Whisk gently to incorporate the spices into the liquid mixture.
Step 4
Arrange the chicken breasts in the marinade using a pair of tongs.
Step 5
Flip each chicken breast over several times so it is well coated with the marinade.
Step 6
Use aluminum foil to tightly seal the marinating dish.
Step 7
Place the marinating dish in the refrigerator.
Step 8
Watch the time, and after one hour has passed, uncover the chicken breasts and marinade and baste each breast several times using a turkey baster.
Step 9
Recover the dish with the foil and return to the refrigerator.
Step 10
Continue basting the chicken breasts once an hour for four to eight hours.
Step 11
Allow the chicken breasts and marinade to come to room temperature before cooking the meat.
Tips and Warnings
- If you like your food spicy, try adding some red pepper flakes or diced jalapeno to the marinade. Potato salad, pasta salad and watermelon slices will complement the chicken for a summer inspired meal.
- Discard the marinade after removing the chicken breasts from it. Since it came into contact with raw chicken, do not use it to baste the breasts as they cook or as a sauce with the cooked chicken. It may be contaminated with the bacteria that can lead to salmonella. Cook your chicken until it reaches an internal temperature of 170 degrees F to kill any of the bacteria lingering in the raw meat.
