When the weather turns cold, or when your body is feeling less than healthy, a bowl of chicken noodle soup can often go a long ways to help you feel better. While chicken noodle soup can be purchased in cans and jars at most any grocery store, with a few ingredients from your pantry and fridge, you can quickly and easily make your own soup from home, while having full control over exactly what ingredients you include.
Step 1
Chop the onion and place it into your stock pot with the cooking oil. Slice the carrots into thin medallions and add them to the pot. Chop the celery and add it to the pot. Let cook for about two minutes and add in four cloves of finely minced garlic. Let cook for an additional minute.
Step 2
Add chicken broth to the pot. Chicken broth can be purchased at most stores, or you can make your own following your favorite recipe. Use chicken bouillon cubes if stock is unavailable. Follow the directions on the bouillon package for yielding 7 cups of flavored broth.
Step 3
Add 2 lbs. of whole boneless skinless chicken breast to the pot. You can use a store-bought rotisserie chicken as well. Remove the skin of the chicken and cut the meat from the bone. Tear up the chicken into soup-sized pieces and place in the pot.
Step 4
Bring the mixture to a boil and then pull the temperature back down to simmer for 10 minutes, or long enough for the chicken breast to mostly cook through. Pull the chicken breasts from the pot and shred into bite-sized pieces, and return them to the pot.
Step 5
Add your favorite noodles to the pot. You can use a wide range of noodles, but traditionally something like an egg noodle is used. Continue cooking the soup for the recommended amount of time on the noodle package for your desired noodle texture, using the shorter cooking time for al dente, or slightly firm noodles. Add salt and pepper to taste. Take off the stove and serve.
Tips and Warnings
- Consider adding an herbal kick of flavor to your soup by including herbs such as bay leaf, parsley or thyme.
- Use separate clean work stations and utensils for both your raw chicken and vegetables to prevent cross-contamination.
