How to Baste & Broil Shrimp

Shrimp are not only low in fat and calories, they are rich in omega-3 fatty acids, niacin, iron, zinc and copper. One of the easiest ways to cook shrimp is to baste and broil them. If you use fresh shrimp make sure they have a mild aroma, firm flesh, and the shells are tight against the skin. Fresh shrimp must be shelled and deveined. However, some brands of frozen shrimp are already shelled and deveined.

Directions

Step 1

Thaw frozen shrimp, covered, in the refrigerator for 24 hours. If you are using fresh shrimp, remove the shell gently while holding the tail. Make a shallow cut lengthwise on the outer curve of the shrimp's back and remove the sand vein that runs along the curve. Rinse in cold water.

Step 2

Prepare a basting mix of oil or butter, spices, and an aromatic such as garlic or onion. Lemon juice also adds flavor. There are many recipes for basting mixes, or you may choose to buy a commercial product.

Step 3

Arrange the shrimp in a broiler pan or baking dish in one layer.

Step 4

Pour the basting mix over the shrimp or use a brush to baste each shrimp individually.

Step 5

Broil 4 inches from the heat for 8 to 10 minutes. The shrimp should be opaque and turn pink and tender when done.

Step 6

Baste one time in the middle of the cooking cycle, this will prevent the shrimp from drying out.

Step 7

Sprinkle with chopped or ground parsley or some other garnish. Serve.

Tips and Warnings

  • Do not use warm or hot water to speed up the thawing process because the shrimp will begin to cook. If the flesh on the shrimp is rubbery and they curl tightly inwards, they are overcooked.
  • Both fresh and thawed frozen shrimp spoil quickly. Use within two days.
