Evaporated milk is whole milk that has been reduced in volume by 60 percent. This milk is useful in a variety of recipes and can be used to thicken gravies, soups or stews, or as a binder in meatloaf. Although you can purchase evaporated milk in small cans, in a pinch, you can make your own. If you are concerned about chemicals or preservatives, purchase whole organic milk and evaporate it in the microwave to create your own organic evaporated milk.
Step 1
Pour the milk in a large measuring cup until the milk is at the 4-cup mark.
Step 2
Place the milk in the microwave. Start the microwave on half power and boil the milk for 10 minutes.
Step 3
Open the microwave and stir the milk with the spoon. Stirring the milk will help to prevent the milk from scalding. A fine skin may form at the top of the milk. Do not skim this milk off; the milk solids should remain in the evaporated milk. Stirring the milk will reincorporate some of these solids.
Step 4
Cook the milk on half power for another 10 minutes and stir. Repeat the process until the milk has evaporated to just over 1 1/2 cups.
Step 5
Allow the milk to cool to room temperature, then pour it into a resealable container. Refrigerate until you are ready to use it.
