How to Fill an Apricot Cake

Baking a homemade apricot cake with a gourmet filling is relatively simple and makes a good treat. This preparation uses apricot preserves to infuse apricot flavor into the batter. When you slice into the apricot cake, you get a burst of fruit in each bite. Use dried apricots in the filling, which soften as you cook them down, along with lemon and Grand Mariner for extra zest. The liqueur can be omitted if you prefer. The filling can double as a glaze for the top of the cake, or you may want to frost the cake with a lemon or butter cream frosting.

Step 1

Heat your oven to 350 degrees F.

Step 2

Blend the baking mix, sugar, egg, water, milk, shortening, apricot preserves and vanilla in a large mixing bowl. Use a mixer on medium speed, scraping the bowl often. Mix on medium speed four minutes.

Step 3

Pour batter into your baking pan, and bake 35 minutes.

Step 4

Cool for one hour. Then cut your apricot cake lengthwise in half.

Step 5

Prepare the filling by placing the apricots, water, liqueur, lemon and sugar in a cooking pot. Simmer for 30 minutes, until apricots are soft.

Step 6

Puree the filling in a blender or food processor. Allow it to cool to room temperature.

Step 7

Top the middle layer of the cake with the apricot cake filling. Add the top layer of the cake, and spoon the remaining filling over the top and sides of the cake, if desired.

  • 1 1/2 cups Bisquick baking mix
  • 1/2 cup sugar
  • 1 egg
  • 1/2 cup water
  • 1/2 cup milk
  • 2 tbsp. shortening
  • 1/2 cup apricot preserves
  • 1 tsp. vanilla
  • Large bowl
  • Electric mixer
  • 8" X 8" X 2" baking pan, greased
  • Filling:
  • 1/2 cup dried apricots, chopped
  • 1 cup water
  • 2 tsp. Grand Marnier (optional)
  • 1 tbsp. lemon juice
  • 1/2 cup granulated sugar
  • Pot
  • Food processor or blender
