How to Bake With Carob Powder

Baking with carob powder is similar to baking with cocoa powder. To substitute carob powder for cocoa powder, replace one part cocoa with 2 1/2 parts carob powder by weight. Carob is high in calcium and does not contain any caffeine, unlike cocoa. Carob does not have exactly the same flavor as chocolate, but is naturally sweet, allowing less sugar to be used when baking. One tbsp. unsweetened carob powder has 25 calories, no fat or cholesterol and 6 grams carbohydrates. One tbsp. unsweetened cocoa powder contains 12 calories, 1 gram of fat, no cholesterol, and 3 grams of carbohydrate.

Carob Chip Brownies

Step 1

Preheat the oven to 350 degrees Fahrenheit and lightly oil an 8-inch-square baking pan.

Step 2

Combine in a bowl the flour, carob powder, baking soda and baking powder with a wooden spoon, mixing thoroughly.

Step 3

Combine the remaining ingredients except the carob chips and pecans, mixing until smooth.

Step 4

Add dry ingredients to wet ingredients and fold in nuts and carob chips.

Step 5

Bake for 30 minutes until a toothpick comes out clean. Cool in the pan on a wire rack.

Tips and Warnings

  • Serve with ice cream or chilled milk for a nutritious and delicious snack. Brownies made with carob powder are not a low-calorie food. Each 2-by-3-inch brownie contains 104 calories, 26 g carbs and 2 g fat per serving.
  • Avoid serving nuts in baked goods to those who may be allergic to nut products.

  • 3 oz. soft tofu
  • 1 tbsp. melted coconut oil
  • 2 tbsp vanilla extract
  • 1/4 tsp. almond extract
  • 1/2 cup carob chips
  • 1/2 cup pecans
  • Wire rack
