Nothing says soul food like a good fried chicken recipe. Southern cooks pride themselves on how they cook their fried chicken, and there are a variety of recipes available. If you have grown to love the fried chicken at a local soul food restaurant, you can recreate this recipe at home with some simple ingredients and a little experimentation.
Step 1
Rinse the chicken with cool, running water, and cut it into pieces with a sharp knife.
Step 2
Mix the salt, black pepper, garlic and onion powder together in a small bowl.
Step 3
Crack three eggs into a large bowl. Whisk in 1/3 cup room-temperature water to thin the eggs.
Step 4
Combine the flour and the remaining black pepper in another bowl.
Step 5
Season each side of the chicken pieces with the salt and pepper seasoning mixture.
Step 6
Fill a large, heat-resistant pot that is appropriate for frying halfway with oil. Heat the oil to 350 degrees Fahrenheit.
Step 7
Dredge, or coat, each piece of chicken with the egg mixture. Transfer the chicken to the flour, and coat each piece with the flour mixture.
Step 8
Line a large platter with three or four layers of paper towels.
Step 9
Add four to five pieces of chicken at a time to the oil, using tongs. Fry the chicken for approximately 10 minutes, or until the chicken becomes light brown and crispy and the juices run clear if a fork is inserted.
Step 10
Remove the chicken from the oil, using tongs, and place it on the lined platter to help absorb the oil.
Step 11
Cook the rest of the chicken in batches as in Steps 9 and 10. Remove the pot from the heat.
