Tilapia is a small fish that originated in Africa, but is now cultivated in many parts of the world. Tilapia can grow to about 18 inches long and 4 lbs. and is available at the fish counter in most grocery stores. Tilapia meat is white and mild-tasting and works well with citrus-based sauces like lemon or orange. Tilapia with orange juice and butter sauce is a good choice for light lunch or dinner.

Step 1

Heat 1 tbsp. of olive oil in a skillet on a medium-high burner.

Step 2

Add tilapia fillets to the skillet and let them sauté for about four minutes per side, turning once.

Step 3

Remove the tilapia fillets from the pan once they’re cooked and set them aside.

Step 4

Add 1 cup of orange juice and 2 tbsp. of butter to the pan. Bring it up to the boil and let it simmer until the sauce has thickened, stirring often.

Step 5

Pour the orange juice butter sauce over the tilapia fillets and serve.
