How to Cook Buffalo Fish

Baste the fish with the ingredients you want.

Buffalo fish is a type of freshwater fish that is best cooked in the oven. It isn't like buffalo-style chicken wings, served with ranch or blue cheese dressing for dipping. If that's disappointing to you, don't despair. You can still cook buffalo fish and baste the fish in creamy, buffalo-style hot sauce just like you do with chicken wings. Experiment with cooking buffalo fish, basting the fish with different ingredients.

Step 4

Baste the fish with the buffalo-style hot sauce, using a cooking brush. Put it in the oven, and bake it for 25 minutes.

Step 5

Flip the fish fillets about 12 minutes into cooking with a spatula, basting the flipped size of the fish as well.

Step 6

Remove the fish from the oven when the internal temperate reaches 145 F on a meat thermometer. The fish should also flake easily when punctured with a fork.

Things You'll Need

  • 3 lbs. buffalo fish fillets

  • Dash salt and pepper

  • 1/3 cup salted butter

  • 1/4 cup hot pepper sauce

  • 1/4 tsp. salt

  • 1 tbsp. vinegar

  • Medium saucepan

  • Baking dish

  • Meat thermometer

Tip

If you do not want buffalo-style hot sauce for basting the fish, simply melt 1/3 cup of butter in the medium-sized saucepan and use it in the same way as the sauce.

Warning

If you experience muscle pains, vomiting, dark-brown urine or muscle stiffness after eating buffalo fish, seek medical attention. A condition called Haff disease is associated with a toxin found in buffalo fish. If you have questions about eating fish caught or eaten in your area, contact your state’s natural resources or environment department.
