Sour milk is a substitute for buttermilk in baked goods. Sour milk is also used as a starter ingredient for yogurt and cheese making, so knowing how to make sour milk at home is useful. Either vinegar or lemon juice mixed with milk will sour it.

Step 1

Measure 1 cup milk into the pitcher.

Step 2

Add 1 tbsp. of lemon juice or vinegar to the milk.

Step 3

Stir with fork for 30 seconds.

Step 4

Set the timer for five minutes. Use the sour milk when the timer goes off.

Tips and Warnings

  • Use flavored vinegars such as apple cider or balsamic to add their taste to the recipe. Use baking soda instead of baking powder in biscuit and muffin recipes using sour milk; the biscuits and muffins will be fluffier.
  • Do not let the sour milk sit. Use it in your recipe as soon as you create it or it will develop an off flavor.

Things You'll Need

  • 1 cup milk
  • 2-cup capacity pitcher
  • 1 tbsp. vinegar or lemon juice
  • Fork
  • Kitchen timer
