How to Smoke Turnip Greens

Smoking any type of food item can sound like an intimidating cooking method. However, the key to smoked dishes such as turnip greens is infusing smoked flavor into the food. In a dish such as turnip greens, using smoked meats or liquid smoke can help you achieve the desired flavor.

Smoked Greens with Smoked Turkey

Step 1

Peel and chop the onion into small pieces.

Step 2

Fill a clean sink or large bowl with cool water. Place one bunch of turnip greens into the cool water. Dip the greens into the water to dislodge any dust or dirt from the leaves. Cut the stems from the turnip greens.

Step 3

Add the chicken stock to a large pot with the smoked turkey leg or wings, the turnip greens, onions, salt and pepper.

Step 4

Cook the ingredients on high heat until they boil. Reduce the heat to medium-low and cook for one hour or until the turnip greens are wilted and tender.

Step 5

Remove the pot from the heat when the greens are done cooking. Extract the smoked leg or wings and remove the move from the bone. Add the meat back to the pot. Stir to combine.

Step 6

Taste again and add more salt and pepper if needed.

Smoked Greens with Liquid Smoke

Step 1

Rinse the turnip greens to remove any residual dust or dirt. Remove the stems from the turnip greens and slice the leaves in half. Chop the onion and garlic into small pieces.

Step 2

Add the oil to a large nonstick skillet on medium-high heat.

Step 3

Add the onion to the skillet and cook for two to three minutes or until the onions are tender. Add the garlic and cook for an additional three minutes. Add 1-1/2 tbsp. of liquid smoke. Stir to combine.

Step 4

Add the salt, pepper, paprika and additional liquid smoke. Slowly pour in 1/4 cup of water and stir.

Step 5

Add the turnip greens to the pan. Reduce to medium or medium-low heat and cover. Cook for approximately 30 minutes, taking care to leave the skillet covered so that the smoke flavor is infused into the greens.

  • For the greens with turkey:
  • 32 oz. chicken stock
  • 4 bunches turnip greens
  • 1 large smoked turkey leg or 2 smoked turkey wings
  • 1 onion
  • 1 tbsp. salt
  • 1 tbsp. pepper
  • For the greens with liquid smoke:
  • 4 bunches turnip greens
  • 1 onion
  • 2 cloves of garlic
  • 2 tbsp. vegetable oil
  • 1 tbsp. salt
  • 1 tbsp. pepper
  • 3 tbsp. liquid smoke
  • 1 tbsp. paprika
