Jackfruit, sometimes referred to as Chakka, is a common ingredient in Indian curries and other dishes. It's a large, roundish, green fruit that grows on trees. Jackfruit grows best in warm, moist climates, and the trees are believed to be native to the rainforests of India. Jackfruit is rarely grown in the United States, according to the California Rare Fruit Growers Association's website, so most of the jackfruit we can buy is imported. Jackfruit makes a delicious base for a curry dish. The addition of onions, ginger, peppers and coconut milk makes this unique fruit into a delicious spicy curry.

Step 1

Blend the red chillies, ginger, garlic and sugar into a paste using a blender or food processor.

Step 2

Soak the jackfruit pieces in cold water for 30 minutes.

Step 3

Heat a pot of boiling water. When the water is boiling rapidly, add the jackfruit and potatoes, then cook them for 20 minutes.

Step 4

Heat a large pan over medium heat and add the oil. Stir in the the boiled jackfruit and potatoes, then fry the mixture until it begins to brown.

Step 5

Add the chopped onions and tomatoes, and stir lightly.

Step 6
