How to Bake Stuffed Bananas Foster French Toast

You can combine some of your favorite treats into a single, delicious breakfast casserole, perfect for guests or a holiday brunch. Stuffed French toast is a treat, especially when paired with a rich, rum-flavored bananas Foster filling. While you can make stuffed French toast on the stove top, baking it allows you to assemble this dish the night before for a restful and relaxing morning with your friends or family.

Step 1

Spray a 9-by-13-inch baking pan with nonstick cooking spray and set aside.

Step 2

Whisk together eight whole eggs with 2 cups of milk, 1/2 cup of heavy cream, 1/2 cup sugar and 1 tbsp. vanilla in a large mixing bowl.

Step 3

Combine dark corn syrup, brown sugar, maple syrup and pecans in a skillet. Bring the mixture to a boil, then reduce the heat and simmer for two minutes. Stir in sliced bananas and rum extract.

Step 4

Lay bread slices into the prepared pan in a single layer. Top with the banana mixture, then stack one slice of bread on top of each slice on the bottom layer. Pour the egg and milk mixture over the bread and filling.

Step 5

Cover with aluminum foil and refrigerate at least eight hours or overnight.

Step 6

Bake the chilled French toast casserole in a preheated 350-degree oven. Bake covered for 40 minutes, then uncover and bake for 20 to 25 minutes. Allow to rest for 15 minutes before serving.

  • Lighten this dish up with lower-fat milk or egg whites in place of some of the whole eggs.
