How to Cook Pheasant Eggs

Pheasant eggs are considered a gourmet delicacy. The khaki-colored eggs have a large yolk, but less cholesterol than a chicken egg. The eggs are prepared in much the same way as chicken eggs -- scrambled, fried, poached or made into omelets. Pheasant eggs have a rich taste and are a staple on upscale brunch plates in which they are combined with artisan bread, cured meats and homemade cheeses. You can find pheasant eggs at farmer's markets, health food stores and niche food markets.

Poached Pheasant Eggs

Step 1

Boil water in a saucepan filled halfway.

Step 2

Chop a handful of chives finely and grate 1 oz. of Parmesan cheese.

Step 3

Drizzle olive oil over a slice of artisan bread and place 4 slices of pancetta on top of the bread.

Step 4

Crack a pheasant egg into the boiling water and poach the egg for two to three minutes.

Step 5

Remove the egg using a slotted spoon and place the poached egg on top of the bread.

Step 6

Sprinkle Parmesan cheese and chives over the poached egg.

Scrambled Pheasant Eggs

Step 1

Cover the bottom of a frying pan with 2 tbsp. of olive oil and set the pan over a medium heat.

Step 2

Whisk three pheasant eggs in a bowl.

Step 3

Chop a handful of chives finely and grate 1 oz. of Parmesan cheese.

Step 4

Fold the whisked eggs into the frying pan and use a spatula to scramble the eggs as they are cooking. When the eggs have become solid, remove from the frying pan and place the eggs on a plate.

Step 5

Sprinkle chives and Parmesan cheese over the scrambled eggs.

Fried Pheasant Egg

Step 1

Heat 2 tbsp. of olive oil in a frying pan over a low heat.

Step 2

Crack one to three pheasant eggs in the frying pan. Be gentle so you do not break the yolk.

Step 3

Fry the pheasant eggs "sunny-side up." Do not flip the eggs and remove from the frying pan when the transparent white has turned opaque. Flip the egg over once to cook a solid yolk.

Step 4

Serve your fried egg over a bed of cooked quinoa grains, lettuce, rice or a piece of toast.

  • Try substituting the ingredients above for vegetables, other cured meats and cheeses.
  • Eating raw or undercooked eggs can result in foodborne illness.
