Marinades combine acids, oils and seasonings to tenderize meats by opening up tunnels in the meat and infusing the meat with moisture and flavor. Apple juice marinades employ the acids in the juice to tenderize the roast. The marinade seeps into the roast to keep it moist while you cook it on the grill or in the oven. A beef or pork roast can marinate for hours without damaging the meats.
Step 1
Mix a marinade with apple juice as the base. The acidic juice has a natural enzyme to help tenderize the roast.
Step 2
Combine apple juice with ingredients such as chopped onions, minced garlic and crushed pepper corns, in a saucepan and bring to a boil over medium heat. Make enough marinade to equal 1/4 cup of marinade per 1 lb. of roast. Remove the apple juice marinade from the heat and allow it to cool.
Step 3
Place the roast into container and cover it with the apple juice marinade. Cover the container and place it in the refrigerator for at least six hours and up to 24 hours.
