How Do You Make Yogurt Stick to Chicken for Baking?

Yogurt-coated chicken roasts up tender and crisp. The yogurt adds a tangy flavor and the lactose it contains helps to tenderize the meat. Coating chicken with yogurt can be frustrating if you haven't done it before. Most yogurts are thin and tend to slide off of the meat. If you rinse your chicken before coating it, the wetness makes it hard for the yogurt to stick. Adopt a few inside tips and simple tricks to get the yogurt to stick. The tender juiciness of yogurt-roasted chicken is worth the effort.

Step 1

Spray a baking dish with nonstick cooking spray.

Step 2

Rinse your chicken in cool water and dry it thoroughly with paper towels. The dryer it is, the better the yogurt will adhere, so be thorough.

Step 3

Fill a shallow bowl with plain Greek yogurt. Greek yogurt is thicker than most American yogurts and tends to adhere better to the chicken.

Step 4

Season the yogurt with any flavors you choose. Minced garlic and lemon juice work well. Add chopped parsley, cilantro or mint to taste. The rough texture of the herbs helps the yogurt stick to the chicken.

Step 5

Place the chicken into the seasoned yogurt. Coat each piece thoroughly. If cooking a whole chicken, use a spatula or your hands to smear the seasoned yogurt all over the chicken.

Step 6

Put the chicken into the greased baking dish and bake according to your roast chicken recipe.

Tips and Warnings

  • Try lemon or vanilla flavored Greek yogurt for a light and tasty result.
  • Never use the same utensils and serving pieces for both raw and cooked chicken.
