How to Cook or Roast Antelope Game Meat

Antelope are small, fast animals found throughout the grasslands and prairies of western North America. This body frame results in lean, tender meat. As a result, you must use specific cooking methods to preserve the natural flavor without drying out the meat. The cooking methods, however, must change slightly according to the cut of meat.

Grill

Step 1

Preheat the grill to medium-high heat. Any tender cuts of antelope, such as steaks, should be cooked quickly with high heat.

Step 2

Cook a 3/4-inch thick antelope steak for about six to seven minutes.

Step 3

Flip the steak with a pair of tongs and cook for another six to seven minutes.

Step 4

Remove the antelope meat from the grill when it reaches a rare to medium-rare doneness level.

Roast

Step 1

Preheat the oven to 325 degrees Fahrenheit. Roasts or other cuts of working muscles require a lower cooking temperature with an increased cooking time.

Step 2

Roast the antelope meat for about 35 to 40 minutes per pound. For example, a 2-lb. antelope roast requires about 70 to 80 minutes of cooking time.

Step 3

Remove the antelope meat from the oven and allow the meat to sit for 10 minutes before carving.
