How to Fillet an Albacore

Albacore tuna is one of the healthiest foods you can eat. The fish is a lean source of protein, as well as a rich source of omega-3 fatty acids, which help protect your heart, strengthen the immune system and keep your skin soft and supple. To fillet one properly, you must make long, horizontal slices along the tuna's side and remove the meat from the bones that run across its body. The fish is simple to cut once the flesh is partially frozen. It can then be steamed, grilled, broiled or fried, depending on your cooking preference.

Step 1

Thaw a frozen albacore for a couple of hours before cutting into it. It should not be completely frozen or too mushy.

Step 2

Lay the tuna on its side on a cutting board. Insert a fillet knife into the middle of the tuna, close to its head, just beneath the fin. Run the knife all the way across the body to its bottom, just before you hit the tail fin.

Step 3

Place the knife at the top where you first began to cut, and cut all the way around the albacore's head.

Step 4

Reinsert your fillet knife at the original point of entry. Remove the meaty part away from the bone. Cut along the fin to remove the first part of the fillet. Set this aside and begin working on the second fillet.

Step 5

Remove the second fillet by cutting the lower half of the fish. Slice the meat off the bone around its belly area and place this with the first fillet. Use your preferred cooking method to prepare and serve.
