While the folks at the American Egg Board sing the praises of eggs, lauding their edibility and protein-rich interiors, eggs aren't for everyone. If you find yourself among those who use egg alternatives because of a vegetarian or vegan lifestyle or the need to lower your cholesterol, you're no stranger to the need for creativity in selecting an egg substitute. That creativity is at the forefront when you need the power of the egg for its moisture-adding and leavening properties. When it comes to whipping up a batch of brownies from a box mix, you can still retain the moisture without using eggs.
Fruit Replacement
Step 1
Preheat the oven to the temperature indicated in the brownie mix directions.
Step 2
Grease baking pan with a generous amount of vegetable shortening.
Step 3
Substitute applesauce for eggs. Replace every egg the brownie mix requires with 1/4 cup of applesauce.
Step 4
Follow the directions for mixing printed on the back of the brownie mix box, omitting the eggs and add the applesauce.
Step 5
Pour mixture into pan.
Step 6
Bake as directed.
Flax-seed Meal Replacement
Step 1
Preheat the oven to the temperature indicated in the brownie mix directions.
Step 2
Grease baking pan with a generous amount of vegetable shortening.
Step 3
Create your flaxseed egg replacement. For each egg the brownie mix requires, replace it with 1 tbsp. of finely ground flaxseed meal and 1/4 cup hot water. Whisk meal and water together with a fork in a small cup until blended.
Step 4
Follow the directions for mixing printed on the back of the brownie mix box, omitting the eggs and adding the flaxseed meal and water mixture in place of the eggs.
Step 5
Pour mixture into pan.
Step 6
Bake as directed.
Tips and Warnings
- For variety, use different mashed or pureed fruit instead of applesauce. To provide even more moisture, add 1 tbsp. of vegetable oil per replaced egg.
- Keep in mind that eggs often add texture and color to brownie mixes, so your final product -- although tasty -- may be more cakelike and have a darker color.
