Freezing striper -- also called striped bass -- insures that none of your catch will go to waste. Fresh fish must be eaten within 24 hours of being caught, although the sooner you can cook it, the better. Freezing fresh fish allows you to fillet and freeze individual servings that will keep for two to three months in the freezer. Thaw out frozen fish in the refrigerator overnight to keep the fish from drying out and losing it's natural juices.
Step 1
Wrap individual striper fillets with freezer wrap and tape the ends to secure. This simple procedure will freeze fish adequately, but it may become freezer-burnt and lose flavor over time.
Step 2
Freeze an entire striper in a block of ice. Fill a baking pan or deep dish with water and place the fish inside. Set the dish in the freezer. When the ice block is completely frozen, remove the ice block from the pan and store in the freezer.
Step 3
Freeze individual fillets in resealable plastic bags. Place one fillet inside of a plastic bag and fill the bag with water. Freeze the bags with the striper fillets lying flat.
Step 4
Cover an entire striper with an ice glaze. Freeze the whole fish initially overnight. Remove the fish from the fridge and dip the fish in ice cold water. Refreeze and repeat the dipping process until the ice coating is 1/8 inch thick.
