Banana prawns are a type of shrimp found in coastal waters going as deep as 130 feet. The banana prawn has a sweet, delicate flavor. There are two varieties of banana prawns, the redlegs and the white. Both have white flesh, with the redlegs having bright pink or red legs. These prawns may be up to 6 inches in length and are cooked in the same fashion as all other varieties of prawn.
Boiled Prawns
Step 1
Fill a 10 -qt. pot halfway with water. Add 2 tbsp. of salt to the water.
Step 2
Boil the water over the stovetop on high heat.
Step 3
Add prawns to the water. The prawns will sink to the bottom.
Step 4
Cook for three to four minutes or until the prawns float to the top with a red coloring.
Step 5
Remove from water with a slotted spoon.
Grilled Prawns
Step 1
Heat the grill to medium-high heat, approximately 350 degrees Fahrenheit.
Step 2
Skewer the prawns, providing enough space between each to allow them to cook without touching. One-half inch is good spacing.
Step 3
Brush prawns with melted butter and sprinkle both sides with salt and pepper or your favorite Cajun seasoning.
Step 4
Set the skewers on the grill for two minutes, flipping the prawns and grilling for another one to two minutes. The prawns will be pink when done.
Shallow Fry
Step 1
Heat a frying pan to medium-high heat on the stove, approximately 350 degrees Fahrenheit.
Step 2
Drop 2 tbsp. of butter into the center of the pan. Add three minced cloves of garlic if desired.
Step 3
Add the prawns to the pan when the butter is melted. Toss the prawns continuously until they are no longer translucent and have pink flesh, approximately four minutes.
Tips and Warnings
- Clean prawns prior to cooking by cutting off the head, peeling the skin off and slicing the center vein out from the belly of the prawn.
