Kids may turn up their noses at the strange appearance and unusual texture of avocados, but preparing avocados in kid-friendly ways is worth the effort. Avocados are chock full of fiber, magnesium, potassium, folate and vitamins B6, C and E. The fat content of avocados is relatively high; a medium-size avocado contains about 15 g of fat. However, avocados are rich in heart-healthy monosaturated fat and contain very little unhealthy saturated fat.

Avocado Pie

Step 1

Wash and peel two small avocados or one large avocado. Cut the avocado flesh into chunks with a sharp knife, then place the chunks in a blender or food processor.

Step 2

Add the freshly squeezed lemon juice, and puree.

Step 3

Add the sweetened condensed milk and process the mixture until it's smooth and creamy.

Step 4

Pour the avocado mixture into a graham cracker crust. Chill the avocado pie for 1 hour, then serve with whipped cream or frozen topping.

Avocado Milkshake

Step 1

Wash and peel two ripe avocados, then cut the avocados into chunks. Puree the chunks in a blender or food processor.

Step 2

Add the vanilla ice cream, milk, lemon extract and vanilla. If desired, add a small banana.

Step 3

Blend until the avocado milkshake is creamy.

Tropical Fruit Salad

Step 1

Wash and peel an apple, avocado and papaya, and cut them into cubes.

Step 2

Place the cubes in a bowl, then add grapes.

Step 3

Stir in the miniature marshmallows, shredded coconut and chopped nuts. Use your favorite type of nut, such as cashews, almonds, peanuts or walnuts.

Step 4

Chill the tropical salad in the refrigerator, then serve in bowls or cups.

Avocado Roll-Ups

Step 1

Place two ripe avocado slices in a bowl. Mash the avocados with a fork.

Step 2

Spread the mashed avocados evenly on four fajita-size tortilla shells. Place one slice of deli turkey and a slice of mozzarella or cheddar cheese on top of the avocado. If you'd like, top each one with shredded carrot.

Step 3

Roll the tortillas tightly around the filling. Place the avocado roll-ups on a plate, then slice each roll-up in half.
