Hush puppies are a Southern delicacy that date back possibly to before the Civil War. Composed of cornmeal and seasonings, these balls of dough were traditionally fried in the oil used at fish fries. Hush puppy mix is widely available in supermarkets, and is generally pre-seasoned. Making salmon patties with hush puppy mix is no different from making them with bread crumbs. The only difference is that the cornmeal in the hush puppy mix makes for much crispier fried salmon patties.
Step 1
Combine the salmon and 1 cup hush puppy mix in a bowl and mix them with your hands.
Step 2
Add the onion, celery and garlic, as well as salt, pepper and lemon juice to taste, and mix the ingredients again.
Step 3
Pour a beaten egg into the mixture and work it gently in with your hands. Combine the ingredients without squeezing so that the flaked salmon does not get mushy.
Step 4
Coat the bottom of a skillet with a little bit of olive oil and heat it over medium-high heat until you can just start to smell the oil.
Step 5
Form the salmon and hush puppy mixture into small, flat patties about the size of your palm and no thicker than your pinkie.
Step 6
Place the patties into the hot oil. Leave enough room between each patty to slide the pancake turner in.
Step 7
Cook the patties for four to six minutes or until their undersides are brown and crisp.
Step 8
Flip the patties with a pancake turner and cook them for another four to six minutes or until both sides are crisp and golden. Check the thickest patty for doneness by inserting the tip of an instant-read thermometer into its center. They need to reach 160 degrees Fahrenheit to be sure that the egg is cooked to a safe temperature.
Tips and Warnings
- Add cayenne pepper to the mix for a spicier result.
- Do not handle anything in the kitchen after mixing in the raw egg without washing your hands thoroughly in soap and hot water.
