Herring is a small, silvery fish that feeds on plankton. There are many species of herring, but each species has a single dorsal fin, a protruding lower jaw, and spineless fins. Herring is a good source of vitamin B, protein and selenium. It can be poached, grilled, baked or smoked. You can find smoked herring as fillets or canned. Smoked herring is readily available and can easily be added to savory dishes.
Barbecue Smoked Herring
Step 1
Place herring fillets in a pot of water and simmer them for a few minutes to desalt and soften them; do not bring the fillets to a boil. Remove the pot from the heat and drain the fillets.
Step 2
Cover the herring fillets with butter and place them on a grill. Grill the fish on low for two minutes on each side. Remove the fillets from the heat and set them aside.
Step 3
Butter the bread slices and place them on the grill. Grill the bread slices until they are toasted. Remove the bread slices from the grill and place them with the fillets.
Herring Cocktail
Step 1
Wash and dry the herring fillets. Dip the fillets in lemon juice and place them into the serving bowls. Set the bowls aside.
Step 2
Combine the yogurt, egg yolks, mustard, salt, pepper and tomatoes in a bowl and mix them until they are well blended.
Step 3
Pour the yogurt mixture over the herring fillets in each serving bowl and top them with a pinch of chopped parsley.
