When it comes to satisfying your sweet tooth, there's nothing quite like chocolate, especially in the form of fudge. Fudge is commonly a favorite due to the rich, chocolaty flavor mixed with the melt-in-your-mouth soft texture of the finished product. Make this sweet treat at home any time you want with relatively few ingredients that are probably already in your cupboards.
Step 1
Combine all of the ingredients in a pot on the stove except for the butter and vanilla. Cook on medium heat.
Step 2
Stir the ingredients in the pot with a wooden spoon just until the sugar has dissolved. Do not stir it past this point as it will cause sugar to come up on the sides of the pot, which will harden into sugar crystals and cause your fudge to be gritty. Place a candy thermometer into the mixture.
Step 3
Take a stick of butter and lightly press the end of it against the bottom and sides of an 8-by-8 inch cake pan. Set the pan aside.
Step 4
Let the fudge mixture reach a temperature of 235 degrees Fahrenheit before taking off the burner. Test to make sure the fudge is ready for the next step by dropping a small amount of the mixture into a glass of cold water. It will form into a little ball in the water if it's ready.
Step 5
Mix in vanilla and butter, beating vigorously with a wooden spoon. Keep beating until the fudge loses its glossy texture. The amount of time this takes will vary depending on variables like your climate and the temperature of your kitchen, but may take quite awhile. One the glossy sheen is gone, pour the mixture quickly into your cake pan and let it finish setting up. Let the fudge cool completely before serving it.
Tips and Warnings
- Add 1/2 cup of peanut butter when you add the vanilla and butter for a peanut-butter fudge.
- Do not overcook your fudge. The longer the fudge cooks, the harder it will become once it sets up.
