Poor quality rice includes old rice and prepackaged, instant rice. Commercial preparation of instant rice degrades the rice kernel so that water flows through it more easily. The result is a quick-cooking rice that may not have the best texture or flavor. The best way to improve poor quality rice is to spice it up and mix it with high quality ingredients. Do not eat rice that is past the expiration date.
Broth
Improve poor quality rice by cooking it in vegetable, beef or chicken broth. Either make a soup, or substitute the broth for the water and cook the rice as usual. For a fuller flavor, try making a risotto using broth, wine, oil and cheese. Saute the rice in oil first, then add wine and hot broth. When the rice is tender and the liquid is absorbed, stir in a small amount of freshly shredded Parmesan or Asiago cheese.
Vegetables
Improve both the flavor and healthfulness of your dish by adding vegetables. Choose peas, sliced carrots, broccoli florets or greens. Wash and slice the vegetables. Saute the vegetables in oil and spices for few minutes, then add the rice. Coat the rice with the vegetable mixture, then simmer in water until done. Garnish with fresh herbs such as parsley or cilantro.
Casseroles
Use low-quality rice as a filler in casseroles. Cook the rice according to the package instructions and then mix it with other ingredients in a greased baking dish. Add broth, cream, browned meat, chopped vegetables or beans. Bake the ingredients until bubbly and cooked through. Melt cheese on top for extra flavor.
Veggie Burger
Cook the rice until it is past al dente but still firm. Saute sliced onions, beets and garlic until softened and aromatic. Use vegetable oil instead of butter to reduce saturated fat. Mash up cooked black beans and mix them with the rice and beets. Add parsley, coriander or thyme for flavor. Add enough flour to dry the mixture. Form patties and fry them for two minutes on each side.
