Finding low carb desserts can be hard to do if you're on a low carb diet. However, many popular recipes can be adjusted to accommodate low carb diet requirements. Low carb pumpkin pie cheesecake is a delicious dessert you can serve during the holidays or any time of year. This cake has no crust, though website Cooking Cache suggests using finely ground almonds as a low carb crust alternative.
Ingredients
To make low carb pumpkin pie cheesecake, you will need three 8 oz. packages of cream cheese, one 15 oz. can of 100 percent pumpkin puree, 1/2 to 2/3 cup of sugar substitute such as Splenda, 1/2 tsp. of vanilla extract, 1 tsp. ground cinnamon, 1/4 tsp. ground ginger and three large eggs at room temperature.
Directions
Preheat your oven to 325 degrees. Spray the inside of a springform pan and set aside.
In an electric mixer, beat the cream cheese on medium speed until it is light and fluffy. Beat in the pumpkin, spices and sugar, then beat in the eggs one at a time. Pour the batter into the prepared pan. If using an almond crust, press the ground nuts firmly into the bottom of the pan before pouring in the batter.
Place the cake into a roasting pan or deep oven-proof pan and fill the pan with boiling water until it fills half of the springform pan. Place the deep pan with the cake in the oven and bake 40 to 45 minutes until the center of the cake is set. Once set, turn off the oven and crack the door, leaving the cake inside for 15 minutes.
Remove the cake from the pan and place it on a cooling rack to cool completely. Refrigerate the cake overnight if possible, or remove from springform pan and serve.
Nutrition
This cake is intended for 10 servings. One serving contains 271 calories, 4.8 grams of carbohydrates, 15.4 grams of saturated fat and 7.4 grams of protein. To reduce the saturated and total fat content of the cake, use Neufchatel cream cheese or low-fat cream cheese. If you don't want a very sweet cake, you can reduce the sweetener amount. Add chopped walnuts or pecans to the cake before baking, or sprinkled on top after baking, for added protein.
Low Carb Diets
Low carb diets are often followed to lose weight and might reduce insulin secretion, which forces the body to burn body fat stores instead of glucose. However, the Mayo Clinic cautions that weight lost during a low carb diet is not definitively due to lower insulin levels.
