Sauerkraut is a German food that consists of fermented green cabbage. Sauerkraut is traditionally fermented in lactic acid bacteria, or bacteria found naturally within the cabbage leaves. White wine is added in some sauerkraut recipes. Sauerkraut is often served as a side dish, and may be eaten raw or cooked. It is low in fat and a good source of vitamin C. You can eat sauerkraut in several different types of dishes.
Step 1
Heat the sauerkraut in a pot and then pile it onto your plate as a side dish alongside meat and rice or vegetables.

Add raw sauerkraut as a condiment to your hot dog, sausage on a bun or bratwurst.

Spread a layer of raw sauerkraut on rye bread, and add corned beef, mustard and Swiss cheese to make a Reuben sandwich. Use lean turkey and whole-grain bread to reduce the sandwich's fat and calories.
Step 4
Add raw sauerkraut to soups toward the end of their cooking times, so it warms through but maintains its flavor. The sauerkraut will add both flavor and texture to the dish. Drop it into the pot and stir to combine it with the other ingredients so it is well incorporated. Soup ingredients complementary to sauerkraut include sausage, onion and celery.
Step 5
Drain raw sauerkraut by squeezing the moisture out of it, then toss it into a salad bowl. Add other salad vegetables, including salad greens, peppers, onions and carrots, and mix all of the ingredients together with the vinaigrette of your choice.
