Often served at brunch, this low-carb quiche can pass as breakfast, lunch and even dinner. This variation of classic quiche replaces traditional ingredients with modern substitutions such as Egg Beaters, sugar substitutes and soy milk to cut carbs without sacrificing any of the flavor.
About Quiche
The word "quiche" is derived from the German word "kuchen," which means cake. Though thought to be a French dish, quiche actually originated in Germany during medieval times and was originally an open pie filled with a baked mixture of egg and cream custard with smoked bacon. Typically served warm, this dish can also be eaten cold by the slice.
Low-Carb Quiche Filling
To make a low-carb variation of a classic quiche filling, melt 2 tsp. of butter in a large nonstick skillet over medium heat. Add 1 tsp. of onion powder and stir until combined.
Whisk 1/2 cup of Egg Beaters Original, 1 1/2 cups of Silk unsweetened original soy milk, 1/2 tsp. of salt, 1/8 tsp. of pepper, a pinch of nutmeg, 1/4 cup of mozzarella cheese and the melted butter with onion powder mixture in a medium bowl until blended.
Pour the mixture into a pre-baked pie shell and sprinkle an additional 1/4 cup of mozzarella cheese on top.
Bake the quiche at 350 degrees for about 35 minutes or until the top is golden and a knife inserted in the center comes out clean.
This recipe yields eight servings, each containing less than 1 carb per serving. Be sure to check the nutrition facts on the products that you purchase to use in this recipe to ensure that your quiche has the fewest possible carbs.
Variations
You can add additional depth of flavor to your quiche by including shredded or cubed chicken breast, bacon bits or shrimp. Each of these options adds different flavors while adding no carbs to the mix. If adding additional carbs is not out of the question, spinach can be incorporated in the egg mixture before cooking for a colorful variation.
Low-Carb Crust Recipe
To make a pie crust that is low in carbs, mix 3 tbsp. of flax meal, 3/4 cup of almond flour and 1/4 tsp. of salt. In a separate dish, melt 6 tbsp. of butter and stir in 1/3 cup of a sugar substitute such as Splenda. Then mix both together thoroughly and spread the batter in a 9-inch-in-diameter pie pan with a spatula. Bake at 375 degrees for about 12 minutes or until golden brown. Each crust recipe yields eight servings with only 2 g of carbs per serving.
