How to Cook With Bone Marrow

Bone marrow is a substance found inside any meat bone. You can cook with marrow from beef or veal bones. Bone marrow is a decadent treat, quite high in fat. Marrow from beef bones is high in protein and can make a elegant addition to a meal. Ask your butcher to cut raw beef or veal bones into 2- to 3-inch-long pieces to give you easy access to the tasty marrow inside.

Step 1

Soak marrow bones in cold water for an hour, then use your thumb to push the marrow from one side of the bone and out the other. Bake the marrow in a pan in the oven at 375 F for 12 to 15 minutes or until the marrow is completely cooked through and no pink, white or red remains. Serve the hot marrow on top of a freshly cooked steak.

Step 2

Roast marrow bones in a 450 F oven or grill them over high heat for 15 to 20 minutes, until the marrow begins to sizzle inside the bones. Serve the hot marrow bones alongside toasted bread. Scoop the marrow out of the bone and onto the bread with a tiny spoon and top the marrow with salt, fresh herbs of your choice and lemon juice.

Step 3

Saute raw rice grains in a 50/50 combination of butter and raw bone marrow to add decadence, flavor and protein to a risotto dish. Cook risotto as you normally would after sauteing in the butter-and-marrow combination.

Step 4

Add raw marrow-filled bones to a pot of soup to infuse the final dish with flavor and protein. Cook the bones in the soup while it simmers, until the marrow melts and escapes from the bones. Remove and discard the bones before serving the soup.
