The soft, furry skin of the kiwi covers the small fruit that contains 140 percent of your daily vitamin C intake. The bright green flesh flecked with small, edible black seeds makes a pretty addition to fruit salads and other dishes. The outside skin looks rough, but it is actually quite thin, soft and edible. Keeping the skin intact increases the fiber content of the fruit while retaining all of the vitamin C. Choose kiwi that are slightly soft without any bruised or softer spots.

Step 1

Wash the outside skin of the kiwifruit. Pat the kiwi skin dry with a towel or paper towels.

Step 2

Cut the ends off of the kiwi with a sharp knife. Peel of the skin carefully with a vegetable peeler if you don't want to serve the fruit with it intact.

Step 3

Cut the kiwifruit into thin slices. Cut the slices into quarters if you want smaller pieces.

Step 4

Add the kiwi pieces to a fruit salad.

Step 5

Serve the chopped kiwi pieces on the side along with pancakes or crepes. The fruit makes a sweet and healthy topping for the breakfast foods.

Step 6

Layer kiwi pieces with yogurt, additional fruit and granola. Use a glass serving dish so the bright colors show when you serve the kiwi and yogurt parfait.

Step 7

Add kiwi to you favorite smoothie recipe. Blend kiwi with lemonade and sparkling water for another refreshing drink option.

Step 8

Chop kiwi into small pieces to make a fruity salsa. Combine the kiwi with mango chunks, peppers, fresh lime juice, honey and cilantro. Serve the salsa with tortilla chips or pita chips.
