Shrimp are a healthy and quick dinner option. They can be added to salads and stir-fries or served on their own as shrimp cocktail. However, part of the beauty of a simple dish like shrimp cocktail is the shape and texture of the shrimp. Shrimp cook rapidly and overcooking them can result in the shrimp curling up into tight circles. To preserve the shape of the shrimp, cook them quickly and gently using hot water.
Step 1
Thaw the shrimp completely if you are using a frozen product. Shrimp should be thawed overnight in the refrigerator or under cold, running water.

Remove the legs if they are still attached and devein the shrimp, which means removing the dark "vein" running along the back of the shrimp, using a sharp knife, or check to make sure all the shrimp have been properly deveined.
Step 3
Bring a large pot of water to a boil. Optionally, you can flavor this water with the juice of one large lemon if desired.

Add the shrimp to the boiling water.

Reduce the heat to low immediately and allow the shrimp to simmer in the hot water for approximately two to three minutes, or until they have just turned pink and opaque.
Step 6
Strain the shrimp and add to an ice bath to stop the cooking process.
Tips and Warnings
- Cooking your shrimp with the shells on will help maintain their shape better than if you cook them without the shells. If you want to grill or broil your shrimp, you can use cooking skewers to help them maintain their shape. Skewer the shrimp lengthwise so the top and bottom of the shrimp are secure. However, you should also keep a close eye on the shrimp because they only take a few minutes to cook with this method as well.
